Focusing on a fresh approach to ingredients, the Maine Dining Room specializes in organic foods, naturally-raised beef, poultry and pork and locally procured, grown and picked items. Wild foraged mushrooms as well as locally raked blueberries are staples on this seasonally-changing menu. Traditional classics such as Chateaubriand, Rack of Lamb and Caesar Salad as well as flaming desserts are prepared tableside for 2 or more guests. Chef de Cuisine Gallit Sammon creates her menus for ingredients brought daily from local farmers. The Maine Dining Room has won the Wine Spectator Award of Excellence from 1998 through 2008.
